One-Pot Chipotle Barbacoa Short Ribs (Taco Style) 🔥 800g–1kg beef short ribs (bone-in or boneless) 1 tbsp oil 1 onion, sliced 4 garlic cloves 1–2 chipotle chillies in adobo (or 2 tsp chipotle paste - or smoked paprika & cayenne) 1 tsp ground cumin 1 tsp dried oregano ¼ tsp ground cloves (optional) 1 tbsp tomato purée Juice of 1 lime 250ml beef stock Salt and pepper To Serve Corn or flour tortillas Pickled red onions Fresh coriander Lime wedges Optional: avocado, sour cream, crumbled feta 1. Sear the ribs Preheat the oven to 150°C (fan). Heat oil in a Dutch oven or deep ovenproof pan. Season the ribs with salt and pepper, then brown on all sides (8–10 mins). Set aside. 2. Build the sauce In the same pan, soften the sliced onion for 3–4 mins. Add garlic, cumin, oregano, and tomato purée. Cook for 1 min. Stir in the chipotle, lime juice, cloves, and beef stock. (I skipped this step & it’s ok for you to as well) 3. Cook low and slow Return the ribs to the pan, cover with a lid or foil, and place in the oven. Cook for 3.5–4 hours until the meat is tender and falls apart. 4. Shred and reduce Remove the ribs. Skim fat if needed. Simmer the sauce on the hob to thicken slightly (5–10 mins). Shred the meat, discard the bones, and stir it back into the sauce. 5. Serve your tacos Warm tortillas and load with shredded short rib, pickled red onion, coriander, and a squeeze of lime. First dice the sweet potato, onion, carrot, celery and bell pepper. Finely grate the garlic and ginger. 2. Get 3 bowls. In one add flour, another egg and breadcrumbs in the last one. Carefully slice the chicken in half, but not all the way through, to butterfly it. 3. Season the chicken with salt and black pepper, then coat in the flour, then egg, then breadcrumbs. Set aside. 4. In a pan with a little oil, cook all of the diced veg. After 8-10 minutes, add the garlic, ginger, curry powder, garam masala, salt and black pepper. Cook for 30 seconds. Add the coconut milk and simmer for 5 minutes. Blend the sauce totally smooth and keep warm in a saucepan. 5. Heat up a little oil in a frying and fry the chicken until golden brown and cooked through. Serve the chicken over rice, pour over the sauce and garnish with chopped fresh coriander then enjoy. Lemon Herb Grilled Chicken Burger 🍋🌿🍗 Ingredients 500g chicken breast, butterflied or thinly sliced Juice and zest of 1 lemon 1 garlic clove, grated / dried garlic 1 tbsp olive oil 1 tsp dried mixed Italian herbs Salt and pepper Burger buns Sweet potato fries (air fried) Cheese for melting Pickled onions/gherkins Lettuce Homemade Greek Salad: 1 cucumber, chopped 2–3 tomatoes, chopped 1/2 red onion, sliced Handful of olives 50g feta, crumbled 1 tbsp olive oil 1 tbsp red wine vinegar Pinch of dried oregano Salt and pepper Homemade Tzatziki: 200g Greek yogurt 1/2 cucumber, grated and squeezed of excess water 1 garlic clove, grated Juice and zest of 1/2 lemon Small handful of chopped fresh dill or mint (optional) Salt and pepper Method 1. Mix lemon juice, zest, garlic, olive oil, dried herbs, salt and pepper in a bowl. Add chicken and marinate for 20 minutes (or as long as it takes to prep the rest) 2. For the tzatziki, combine yogurt, grated cucumber, garlic, lemon juice and zest, herbs (if using), salt and pepper. 3. For the salad, toss cucumber, tomatoes, red onion, olives, and feta with olive oil, vinegar, oregano, salt and pepper. 4. Heat a griddle or BBQ to medium-high. Grill chicken for 4–5 minutes each side, adding cheese after flipping to melt. 5. Toast buns. Spread tzatziki on the bottom, add lettuce, chicken with melted cheese, pickled onions, and drizzle over pan juices. Chicken & Roasted Veg Pasta Salad with Sun-Dried Tomato Dressing 🔥 Ingredients • 2 large chicken breasts • 250g pasta (fusilli or penne) • 1 red pepper, chopped • 1 courgette, chopped • 1 red onion, chopped • 1 tin chickpeas, drained • 2 tbsp olive oil • 1 tsp dried oregano or mixed herbs • Salt & pepper Dressing: • 3 tbsp olive oil • 2 tbsp sun-dried tomatoes, finely chopped • 1 tbsp red wine vinegar • 1 garlic clove, finely grated • 1 tbsp oil from the sun-dried tomato jar • Salt & black pepper To Finish: • 100g feta, crumbled • Handful cherry tomatoes, halved • Large handful of fresh basil, torn 1. Start the tray bake: Preheat oven to 220°C (fan 200°C). Toss chopped red pepper, courgette, and red onion in 1 tbsp olive oil, herbs, salt and pepper. Spread onto a large tray and roast for 10 minutes. 2. Boil the pasta: Get a pan of salted water on to boil. Add the pasta and cook for about 10 minutes, then drain and rinse under cold water. 3. Add chicken & chickpeas: After 10 mins, take the tray out and add sliced raw chicken breast (scissors work great here) and drained chickpeas. Drizzle with another tbsp olive oil, season again, and return to the oven for 10–12 minutes, until chicken is cooked and starting to crisp. 4. Make the dressing: Mix olive oil, chopped sun-dried tomatoes, red wine vinegar, garlic, tomato oil, and a good pinch of salt and pepper. 5. Assemble the salad: In a large bowl, combine cooked pasta, roasted tray contents, cherry tomatoes, crumbled feta, and torn basil. Pour over the dressing and toss gently. 6.
