Scallion pancake bacon egg and cheese breakfast sandwich 🥓 🍳 🧀 Ingredients •scallion pancakes, sliced •eggs, scrambled •scallions •bacon •cheese (I used a combination of cheddar and Gruyère) •neutral oil (I used avocado oil) Instructions 1. In an oiled pan on medium heat, add scrambled eggs and top with sliced scallions 2. Add scallion pancake dough on top of eggs when they are still runny so the pancake will adhere to the dough 3. Flip over when egg is cooked and top with bacon and cheese 4.
