My assistant baker was frantic because the bottom cake started sliding and cracking while she was crumbcoating the cake. I had to take over. The beginner me, about 6 years ago, would’ve been petrified and panicked really bad. But I was very calm, because I knew right away what to do. I knew i had to flip it over because the upper part was more stable. When a problem like this arise, there’s no better feeling than realizing you actually know what to do. All the times you doubted yourself or second-guessed what you knew just kind of fade away. You’re not bragging or anything — it just feels good inside, like a quiet little win. It reminds you that you’re more capable than you sometimes give yourself credit for.
