These melt-in-your-mouth al pastor tacos are just one reason Pascual in Washington D.C. made our list of Best New Restaurants of 2024. 🔥 At the Mexico City-inspired restaurant run by husband-and-wife duo Matt Conroy and Isabel Coss, just about every dish touches wood fire. The juicy tacos al pastor are made with layers of marinated pork and onions, piled high onto a trompo — a vertical rotisserie — and placed next to their burn box, cooking low and slow for hours. The meat is sliced, served on homemade corn tortillas, and topped with salsa cruda, salsa morita, and roasted pineapple. This is the only taco on Pascual’s menu, but clearly the only taco they need.
